Mezcal is one of the most traditional spirits in Mexico. Its preparation and consumption according to ethnoarchaeological studies date from pre-Hispanic times (400 BC), mainly from the Xochitecatl-Cacaxtla area, corresponding to the Valley of Puebla-Tlaxcala. Mezcal is part of the history of the State of Puebla, due to the ancestral past of the communities belonging to Atlixco, Mixteca Poblana and Tehuacan Valley in the production of high quality agave mezcal.
Mezcal is a distillate made from agave, an endemic plant of the American continent and particularly of Mexico, since it concentrates 75% of the known species. The State of Puebla is the second largest producer of Mezcal in Mexico with 116 municipalities that have favorable geographical conditions for the production of different species of agave, and preserve the ancestral tradition of mezcal production.
Mezcalero
The «mezcalero» is that person who preserves the ancestral tradition of mezcal production; he is the expert who makes this distillate with inputs from his locality and with the use of traditional tools.
In Puebla, the tradition in the production of mezcal has transcended by the great mezcaleros, who have built in their own localities, family factories where the knowledge and production techniques are transmitted from generation to generation.
Certificate of origin
In 1994 the World Intellectual Property Organization (WIPO) issues the declaration of protection of origin of Mezcal, which currently establishes the States of Puebla, Oaxaca, Guerrero, Durango, San Luis Potosi, Zacatecas and some other municipalities in other Mexican States as the geographical region where mezcal can be made from various species of agave.
